		<description>Ok, well aside from the good ole baked sweet potato ( called kumara in some parts)with a marshmallow melting into a glaze on top I am rather partial to a roast veggie salad, with plenty of sweet potato, parsnip, pumpkin and any other kind of roasted veggie you like...throw a couple of cherry tomato&#039;s in roasting dish about 10 mins before the other veggies are ready.
Put it all on a bed of couscous and then toss in a dressing of about 1 tbs olive oil, 1 clove crushed garlic, 2 tbs white wine vinegar and 1 tbs dijon mustard. I just kind of chuck it all together and cant be sure of the measurements.
Actually, this is an old weightwatcher recipe, so has to be good right.
Oh, and sliced roasted sweet potato is also yummy on a pita bread pizza, hmmm, hmmm, hmmmmmmmm.</description>
